From December on, "Arthur Rubinstein The Complete Album Collection" will be the world's biggest CD edition for a solo artist according to Guinness World Records (TM). It features all the legendary pianist's issued recordings made by RCA Victor between 1940 and 1976, and includes one LP issued on the DECCA label in 1978. The collection also includes the recordings Rubinstein made in England for the English label His Master's Voice (HMV) between 1928 and 1940, most of which were released in the United States by RCA on its Victor label. The collection includes complete studio and live performances, solo, concerto and chamber music repertoire in reproductions of original LP sleeves and labels, the earlier recordings, initially released on 78-rpm discs, appear in three sets with 14 CDs in the edition.
The bonus CDs in this edition (CDs 140-142) contain recordings of his legendary 1961 cycle of ten concerts at New York's Carnegie Hall. They include four works that Rubinstein had never before committed to disc plus two others that represent brand-new additions to his RCA discography.
This edition also boasts the finest sound quality ever bestowed on Arthur Rubinstein's complete recordings. The masters for the principal works in the collection come from the series of Living Stereo SACDs and Japanese XRCDs. All the other recordings are based on masters from the Rubinstein Collection of 1999, technically and sonically refurbished for this edition. In cases where the desired results could not be obtained, Sony Classical has gone back to the original analogue tapes.
The 164-page full-colored hardcover book in landscape format includes new liner notes by Rubinstein biographer Harvey Sachs, photos shot or selected by Arthur Rubinstein's daughter Eva Rubinstein, an essay about the legendary 1961 Carnegie Hall concerts, complete discography in alphabetical and chronological order featuring 78s, 45s and LPs and track listings with complete discographical notes, producer names and matrix nos.
The two bonus DVDs are "Rubinstein Remembered", a documentary tracing the great pianist's life from his origins in Łódź, Poland, through his final concert there in 1975, with interviews from family and friends, newsreels, home movies, TV interviews and performance footage. Narrated by Rubinstein's son John Rubinstein and produced by Peter Rosen and the "The Benefit Recital for Israel 1976" recorded at Ambassador College, Pasadena, California on Jan 15, 1975 featuring works by Beethoven, Schumann, Debussy, Chopin and Mendelssohn.
The "Arthur Rubinstein Complete Album Collection" consists almost entirely of reproductions of vinyl LPs in their original sleeves. The few exceptions that were only released on CD retain their original CD cover. There are so many Christmas cookie recipes around but often so little time to bake during the busy holiday season.
The solution? A great tasting basic cookie recipe that quickly and easily turns into such a variety of easy to make Christmas treats, friends and family will think you poured over all your favorite Christmas cookie recipes.
Let's start with the basics.
Basic Cookie Dough Recipe
1/2 cup (or 1 stick) butter (or margarine) at room temperature
1/2 cup brown sugar, lightly packed
2 tablespoons sugar
1/2 teaspoon baking powder
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
In a large bowl, combine all the ingredients except the flour. Beat with an electric mixer, scraping the sides of the bowl several times, until the mixture is light and fluffy. With mixer at a low speed, add the flour gradually, beating just until everything is well blended.
Place the mixture on a baking sheet using a tablespoon measure and press down with a spoon to flatten a bit. Or roll our and cut into shapes with a cookie cutter. Bake at 350ºF for about 12 to 15 minutes, until golden.
This basic cookie mixture is also the base for the following cookie recipes (all baked in a preheated oven at 350ºF).
Orange Cookies
(Makes about 32)
Add 1 tablespoon of grated orange zest to the recipe. Shape into a log that is about 1 1/2" in diameter and refrigerate for 4 hours.
Slice dough into 1/4" thick slices. Place on cookie sheet. Cookies can be decorated with candies, rolled in colored sugar, or cut into pretty holiday shapes before baking. Bake in preheated oven for 12-15 minutes, until lightly browned.
Cherry Coconut Chocolate Squares
(Makes about 54 squares)
In addition to the basic dough you will need:
1/4 cup unsweetened cocoa powder
3 large eggs
1 1/2 cups granulated sugar
1 teaspoon almond extract
1/2 teaspoon baking powder
3 cups flaked coconut
1/2 cup maraschino cherries, well drained and coarsely chopped
Line a 13"x9" baking pan with foil.
Stir cocoa powder into basic dough mixture. Press evenly into the prepared pan. Bake for 10-15 minutes or until the crust looks dry.
In a medium bowl whisk together eggs, sugar, almond extract and baking powder until well blended. Stir in coconut and cherries. Pour over the baked crust.
Bake for 30-35 minutes, until top just begins to brown and a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack. Lift it out on to a cutting board using the foil ends and cut into 1 1/2" squares. Squares can be stored in an airtight container for up to 3 weeks.
Coconut Pineapple Cookies
(Makes about 36)
In addition to the basic dough you will need:
1 1/2 cups sweetened flaked coconut
1/3 cup pineapple preserves (use raspberry or apricot if you prefer)
Add 1 cup of the flaked coconut to the basic dough mixture and mix well. Shape the dough into 1 1/2" balls and roll in the remaining coconut to coat them. Place the balls 1" apart on lightly greased cookie sheets. Make a deep indentation in the center of each cookie with your fingertip.
Bake for 12-15 minutes until the cookie is firm and the coconut is lightly toasted. When cooled, fill each hole in the center of the cookies with the preserves.
You can vary this basic dough to make a wide variety of Christmas cookie recipes. Add other flavorings like maple, ginger or cinnamon. Add chopped dried fruits like apricots or dates. Or bake them plain in holiday shapes and decorate with colored icing.

To satisfy your craving, you tend to reach for vegetarian food high in refined sugars such as candies, dairy-free chocolates, cookies, egg-less cakes, sweetened beverages, white bread or white rice.
These foods contain loads of simple sugar, which can boost your energy level immediately, calm you down and make you feel better. They seem like miracle foods, don't they?
How Sugar Affects Your Weight and Health
Here's the truth. Simple (refined) sugar contains nothing but empty calories. One tablespoon of table sugar feeds 45 calories and ZERO nutritional value to your body.
Look, a piece of banana cake or a handful of chocolates definitely contains more than 1 tablespoon of sugar. So, think about the amount of calories derived from sugar that you stuff in your body each day, other than those foods containing carbohydrate, protein and fat.
Oh gosh, sugar sure is one hideous monster that makes you fat.
Not only that, refined sugar spikes your blood sugar to a high level (that's why you feel better right after eating) within short time, thereby stimulating your pancreas to release more insulin into bloodstream to remove excess sugar and stored as fat in your liver and elsewhere in your body.
When this happens, your blood sugar drops as fast as it rises and you feel tired right after. Soon, you crave for sweet food again to perk up. As you experience this yo-yo cycle repeatedly throughout the day, you've unknowingly pumped a lot more glucose than needed into your bloodstream.
To make matter worse, this yo-yo effect makes you too tired to exercise and most of the blood sugar gets stored away as fat. If you allow this cycle to repeat continually, more and more calories will get transported into fat cells, leading to fat and weight gain.
You won't want to suffer the consequences of the fluctuation between hyperglycemia (blood sugar higher than normal) and hypoglycemia (blood sugar lower than normal) because they can result in more complex health problems such as diabetes mellitus, stroke and atherosclerosis.
Furthermore, to digest simple sugar, your body uses up 27 precious nutrients such as calcium, Vitamin B1, B2, B3, B5, potassium, magnesium, manganese, sodium, chromium, zinc etc in the process that are mainly found in your liver's enzymes.
These important nutrients are essential to maintaining the normal functioning of your body's immune system and fat-burning capability.
Eating sugar excessively leaches your body of these precious nutrients. In the long run, your organs suffer permanent damages that could lead to many critical illnesses and diseases. And of course, make you grow fatter and fatter.
How to Control Your Sugar Intake
A normal vegetarian needs about 40 to 55 g of sugar, equivalent to 8 to 11 teaspoons daily. With cheap high fructose corn syrup being added to most pre-packaged foods these days, you can easily obtain the required quantity of sugar from the food and drinks you consume each day, without adding more to your food.
Sadly, most of us struggle with controlling our excessive sugar intake.
Beware, don't let your body build up a resistance to simple sugar. Once you lose control of your sugar addiction, you'll need more sugar each time to feel satisfied. And like all addictions, it's very, very difficult to kick it.
Exercise more vigilance in watching over your sugar consumption, so that it won't wreck your weight loss plan and inflict damages to your health.
Here I suggest some easy-to-follow tips to control your sugar intake:
1. Eat more complex carbohydrates like whole wheat food group comprising brown rice, whole meal, whole grain, oats, wheat germ, corn, buckwheat.
2. If you want to sweeten your food, choose molasses or pure maple syrup instead of table sugar. Avoid artificial sweeteners such as Nutrasweet or Aspartame.
3. Toss out all canned drinks. One 325 ml canned drink generally contains as much as 15 teaspoons of refined sugar. So that's a good start to cut down on sugar. Moreover, if the drink is carbonated, all the more you should quit completely because it carries so much carbon dioxide that when ingested, can kill most of your healthy cells that could have been needed for effective weight control.
That explains why 99% of people who drink fizzy drinks gain weight more easily than those who do not.
4. Read labels carefully. Watch out for these labels:
"No Added Sugar / unsweetened" - No table sugar is added but could still contain natural sweeteners.
"Sugar Free" - Contain less than 0.5 g of sugar for every 100 g
"Low Sugar" - Contain less than 5 g of sugar for every 100 g
"Reduced Sugar" - Contain 25% less sugar than normal product.
Though simple or refined sugar does you more harm than good, if you keep depriving yourself of your favorite dessert (made of refined sugar) like ice-cream or chocolate cake for too long, you might go crazy!
Hence, by all means, have your little indulgence once a week, or even better, once in a fortnight. However, you must not slack in your self-restraint from sugar, or your health and weight will pay a heavy price for it.

Yesterday we made history at my resort, Lifestyle Resort Da Nang, in Vietnam.
We made the first ever batch of Liquid Nitrogen Ice cream in front of our kitchen and service staff, preparing them for next week when we will make it LIVE in front of our guests at the table, every night of the week.
Ice cream is usually a slow and laborious process, with lots of concerns about controlling bacteria and getting the custard just right. With this technique, the product becomes silky smooth, and can be made in a snap without stabilisers, gums and emulsifiers.
OMG! Healthy ice cream? Sort of. It can be.
I won't bore you with the usual yada yada of the background and history behind using super-chilled liquid nitrogen.
I could tell you all about the history of condensing nitrogen gas, the medical applications, the cool scene in the Wesley Snipes and Sly Stallone movie 'Judge Dredd' where they cryogenically freeze the two guys with a massive cap of liquid nitrogen. Sterling stuff.
I could even carry on about three starred chefs and University Science lecturers with their funky tricks and recipes. But I won't.
I prefer to just tease you with the above so I can cut to the chase and let you know that making this type of ice cream at the table in front of guests is one of my favourite culinary hobbies, and something that gets everybody swooning with joy when they experience it.
Like all processes and technologies, it has its share of naysayers.
Mainly those who haven't tasted it. Sometimes even those who are scared to try it or worried about the risks.
Worse still, there are some who are even afraid that by acknowledging this as possible, relevant and tasty, the great unwashed will abandon their cheap mass produced frozen dairy treats and demand the simple, natural ingredients that make up Nitrogen ice cream.
Actually, no - I don't think that's it.
They're more worried that their years of classical training and the expensive Italian sorbet machine will no longer be required, or that they'll be judged inferior to a couple of us new-age monkeys combining fresh produce in a bowl in front of the diner.
Here are a few simple facts about using liquid nitrogen to make your favourite frozen treat - and about the ice cream itself
This is the most natural ice cream possible. The liquid nitrogen boils back into gas at 196 degrees below zero and dissipates into the atmosphere leaving no trace in the food. The colder and faster that dairy products are chilled, the smoother it will be. This is because there is little or no lactose crystallisation. This is a fact. Liquid nitrogen ice cream is smoother than conventional ice cream. Conventional methods are made smooth by use of gums, chemicals, food additives, stabilisers and emulsifiers. All the numbers, codes and chemical names that you don't understand but see anyway on the side of your commercial ice cream pack. I bet your wouldn't spoon into those if they didn't taste or look like ice cream. Now you don't have to. Ice cream made with liquid nitrogen can be delicious when made without custard or chemical additives - so it can be as simple as fresh milk, fresh cream and sugar or favourite sweetener. Oh - and your favourite flavour(s).
Liquid Nitrogen? That's quite a mouthful.
To abbreviate, we refer to it as LN2.
The chemical symbol for nitrogen is N, the gas is referred to 'in Science' as N2, and we add 'L' to the front as abbreviation for 'Liquid', hence 'LN2'.
Yes, it's a sloppy abbreviation, but we're kind of cool with using it. OK, no more 'cool' puns. Noted.
Vegetarian? Vegan? No problem. We can make LN2 ice cream with soy milk or coconut milk instead of milk or cream.
Macrobiotic? belt some nuts or wheat into it. Sorry bud, there's no helping you. Follow the vegan path, or use nut milk
Diabetic? Sugar hater? No worries. Can use isomalt, honey, aspartame, fructose or any other sweetener as no cooking is required.
Traditionalist? No worries mate. Make your Creme Anglaise, get your lightly whipped cream, and make your ice cream with the usual steps, swapping the ice cream machine for a bowl and some liquid nitrogen. And mutter in some European language about 'bloody avante garde cooks' like me. I won't be offended. Much.
Normal ice cream takes around 20 minutes to freeze in an ice cream machine. Liquid nitrogen ice cream takes as long as four minutes and as little as one minute. Remember what I said about speed of chilling being a major factor of smooth silky texture. BINGO! Come in spinner!
But what about the chemicals? Umm..... what? Are you on DRUGS? Nitrogen makes up 78% of the air we breathe. If you don't like it, stop breathing. The process also eliminates all of the unnatural stuff you have to add into the food to make it freezer-stable and smooth.
But it's dangerous. Why? Oh yes - it's so cold. 196 degrees Celsius below zero. yes, it is. But deep fat fryers are 190 degrees C above zero. And I don't see people cutting back on Fries, spring rolls and crumbed seafood due to the potential for injury. Keep it safe. Keep it sane. Keep it sensual. Sorry. Consensual.
But it's dangerous because it can explode if you enclose it in a canister. People could die - staff that handle it need training. Yes. And deep fryers explode if they get to 200 degrees C, or if you drop water in them. Your point is?
But my guests/friends/family are alcoholics and prefer a drink to ice cream. GREAT! LN2 actually freezes alcohol. You can turn their favourite cocktail, spirit or alcoholic drink into a funky sorbet that will have them staggering around like loons. Alcohol and high sugar content normally softens ice cream. LN2 allows these to be used in higher than normal amounts when making ice cream.
But the equipment is expensive. Ah yes. That old chestnut. If we are talking about a bowl and a whisk, then yes, they can be. Try a budget kitchen shop instead of that designer outlet.
If you're talking about the specialised liquid nitrogen storage and transport container, it's called a dewar. They range in cost from 0 to 00 depending on size. About a quarter of the price of an ice cream machine.
But.....the ingredients. You need to pay for the nitrogen. SURE you do.
And then you have to worry about death, taxes, public transport fares, electricity, gas, internet fees, the gym or the doctor, and possibly even a parking ticket, a fine, a takeaway lunch or the coffee at Starbucks.
No shit Sherlock. Life is all about paying through the nose for everything. It's the Capitalist way.
but you'll be relieved to know that Liquid Nitrogen costs only about 50 cents to a litre. And if you use it, then you don't need to thicken with eggs or additives, so your net cost drops - for a far superior product.
But...but....but....people don't like to see really fresh food made in a highly visual and exciting way because they are boring naysayers and critical warts on the skin of society. OK then, make it in the kitchen and keep it in the freezer. Make more portions and dramatically reduce your cost. And it tastes better than normal ice cream.
But...but....but...... Yup. No more rebuttals.
